Mix the flour, baking powder and salt well in a bowl. Then add the egg and low-fat quark. Now you can add various grains as you like. Knead everything well by hand and shape into a loaf.
Place the loaf on the oven rack and brush with water, or simply hold it under running water beforehand. The water creates a nice crust. Now sprinkle with grains. Press the grains lightly, otherwise they will burn.
I also put a cereal bowl with water in the bottom of the oven, but it`s not absolutely necessary.
Bake the bread for about 40 minutes. Let cool completely before cutting. If it hasn`t cooled down completely, it won`t cut well. At first it has a hard crust, which will soften after a few hours.
