Boil the carcass in the water with a little salt, pepper, the bay leaf, the allspice and the juniper berries for about half an hour. Take out and let cool down a bit.
Remove the meat from the bones as completely as possible and return it to the pot. Either put the potatoes and vegetables in the saucepan and cook them or fry them well beforehand with the olive oil. Cook everything until done.
Remove the allspice, juniper berries and bay leaf and season with salt, pepper and marjoram.
