Cut the celery into small cubes, cut the carrots and leek into slices and chop the parsley.
Melt the butter in a saucepan and sauté celery and carrots in it until soft. Then add the leek (it doesn`t take as long as the other vegetables) until it`s soft. Then fill up as much water as you like and add the parsley and all the spices. If you are not into garlic, you can also use soy sauce as a seasoning. Simmer everything for about 5 minutes.
I often have a slice of bread with it.
