Dice the potatoes and carrots, put them in a saucepan, just cover them with water, add a little salt and a pinch of sugar and cook the vegetables until soft for about 20 minutes. After 10 minutes, add the whole sausage to the pan.
When the potatoes and carrots are soft, turn off the heat and wrap the sausage in aluminum foil to keep it warm.
Drain the potatoes and carrots, but collect the cooking water, it is the best base for the next soup or sauce. Coarsely mash the vegetables with a pinch of butter and a little cooking water. Season with the spices and stir in the herbs.
Arrange the potato and carrot mash with the sausage on a plate.
