Instructions

  1. Separate the eggs and beat the egg white with the rice syrup in a bowl until stiff. Beat the egg yolks, skyr and milk until frothy. While stirring constantly, add the flour, baking powder and, if you like, the vanilla flavor. Fold in the whipped egg whites. Heat a pan on medium heat and use a ladle or tablespoon to add small pancakes to the pan. Bake them for a total of 5 minutes on both sides. The time varies depending on the size. Top the pancakes with ingredients of your choice and serve. They taste great the next day too. The amount makes about 12 small or 5 - 6 large pancakes. The pancakes aren`t very sweet. If you prefer it sweet, add a little (vanilla) sugar. However, you can also use different toppings to sweeten the pancakes more. This is a basic recipe: you can experiment a lot with this recipe and additional ingredients, but I prefer to eat them according to this recipe.
