- Heat clarified butter or oil and fry the sliced meat in it, chop onion and garlic and fry, salt and pepper. Add the ham cubes.
- Wash the leek sticks, cut in half lengthways and cut into small pieces. When the meat begins to brown, add the sliced mushrooms.
- Mix in the dried chilli and caraway seeds.
- Reduce the heat and cook covered for 10-15 minutes, add some liquid (water, stock) if necessary, stir occasionally.
- Add a few capers or a little lemon juice or vinegar for the acidity.
- When the leek is done, add the sour cream and cheese and stir carefully over a low heat.
- Ribbon noodles or rice are ideal as a side dish.
