Fry the chicken breast strips in the hot pan in the oil until they have turned some color. Take the meat out of the pan and season with salt and pepper.
Now put the onions in the pan and let them take color. Add the tomato paste and sweat briefly. Deglaze with the orange juice and let it boil down a little. Add the cream and bring to the boil again. Season to taste with salt, pepper, tarragon and sugar.
Add the meat again, let everything simmer for about 3 - 4 minutes and then serve.
