Sear the meat in a pan in a little oil and cook, then remove from the pan and set aside. In the meantime, clean the mushrooms and cut them into slices.
Sweat the mushrooms in the pan in the gravy with the red wine and a little thyme. Top up with the cream and sour cream and season to taste. Stir in the cranberries and add the meat. Season to taste and, if necessary, add seasoning.
Spaetzle, croquettes or bread dumplings taste great with it.
