Cut the meat into thin strips. Clean, wash and slice the mushrooms. Cut the spring onions into rings and the carrots into thin strips. Peel and finely dice the onions and sauté them in hot oil in a non-stick pan.
In the meantime, prepare the pasta, adding just a little salt to the cooking water. Pepper the meat and fry it vigorously. Then take it out of the pan and keep it warm.
Fry the mushrooms and spring onions until crisp, deglaze with a little vegetable stock. Add the shredded meat, season to taste and let simmer for a few minutes. Season again to taste and sprinkle with a little parsley.
Strain the pasta, drain well and serve with the shredded meat.
