Chop the onions, garlic and tomatoes into small pieces. Sweat the onions and garlic in a little oil and add the sugar until everything caramelizes a little. Then add the tomato paste and fry a little to develop light roasted aromas.
Then add the tomato pieces and sauté a little too. Then add the rose vinegar. Then mix in the remaining ingredients and simmer gently on the stove for at least an hour.
Finally, put everything in the blender, puree and strain through a sieve.
