Instructions

  1. Peel and dice the potatoes and then cook for about 15-20 minutes until soft.
  2. Put the drained potato pieces in a bowl. Add the cornstarch, flour and breadcrumbs. Season with 2 teaspoons of salt and plenty of pepper. Optionally supplement with other spices. Now mash everything and mix together - e.g., with a fork or a potato masher. Then add the egg and work it in too, so that a kind of relatively firm mashed potatoes is created.
  3. Line a work surface with parchment paper and sprinkle with plenty of flour. Put the mashed potatoes on top and spread them a little wide or press them flat with your hands. Now sprinkle the top again generously with flour and put on a second sheet of baking paper. Roll out the mixture about half a centimeter thick with a rolling pin.
  4. Peel off the top layer of baking paper and use a cookie cutter or glass to cut out circles with a diameter of 4 to 5 centimeters. Remnants of dough can be rolled out again and processed in the same way. The eyes of the smileys are gouged out with a drinking straw. Then shape the laughing mouth with a teaspoon.
  5. Pour oil - approx. 4 to 5 centimeters high - into a saucepan or deep pan and heat to an optimal 160 to 180 degrees. Put the smileys in the hot oil and fry for 4 to 5 minutes. Turn once and - if they are golden yellow or light brown in color - take them out and let them drip off briefly on kitchen paper.
  6. Ketchup, mayonnaise or a dip are suitable for serving.
