Instructions

  1. Boil the beans in salted water until cooked, drain and let cool down a little.
  2. Halve the tomatoes and dice the avocado.
  3. For the dressing, mix the ingredients well and add to the beans with the onions and sun-dried tomatoes and let steep for about 30 minutes. Mix in the tomatoes and avocado. Finally add the peanuts.
  4. This salad goes well with smoked fish or cold roasts.
