Peel and core the quince and cut into small cubes. Heat the sugar in a pan, add the quince cubes and let them caramelize slightly. Deglaze with the apple juice, add the cinnamon and do not cook too soft on a low fire (approx. 5-7 minutes). Remove the pan from the heat and let it cool down.
For the dressing:
Whisk all the ingredients for the dressing together well.
Mix the quince cubes and the lamb`s lettuce with the dressing.
Tip: If you prefer something more sophisticated, you can add a dash of quince brandy to the dressing.
This dressing also goes well with endive or other green salads.
