Halve the bacon lengthways and then cut into small squares. Fry until crispy in a pan, remove and let cool on kitchen paper.
Peel the carrot and slice it into fine strips, mix with the rocket and place on two plates. Cut the mozzarella into slices and spread on the salad.
For the dressing, mix all the ingredients together well and mix in the bacon. Pour the dressing generously over the mozzarella so that some of it flows onto the salad.
