First wash the salsify thoroughly, then peel them under running water. Cut the sticks into pieces approx. 2 cm long. Immediately put them in lemon water so that they don`t turn brown. Boil the salsify in salted water until soft and drain.
Warm the pesto with the white wine, pour in the cream, season to taste and let it get really warm again (do not let it boil anymore). Add the salsify to the pesto sauce and mix well.
As a variant, you could also do this with a pesto rosso.
