Instructions

  1. Wash and clean the snow peas, then blanch them in boiling salted water for 10 seconds, pour them into ice water and drain well.
  2. Sort out the lettuce and pluck pieces, wash and drain well. Peel and grate the carrot. Roast the pine nuts dry in a non-stick pan.
  3. Finely chop the basil leaves, dice the shallot very finely. Mix the cream cheese with the basil and the shallot cubes, season with salt and pepper. Shape the cream cheese into small balls.
  4. Mix the lemon juice with salt, pepper and honey, then fold in the olive oil. Mix the vinaigrette with the sugar snap peas and lettuce and arrange on plates. Pour the cream cheese balls on top and sprinkle with the pine nuts.
  5. Goes well with: crispy baguette
