  1. Pour gelatin with water and leave for 5-10 minutes to swell.
  2. Combine sour cream and kefir in a bowl, stir with a whisk.
  3. Add sugar and vanilla sugar. Stir well to dissolve the sugar.
  4. Gently heat the swollen gelatin in a steam bath or in the microwave for a few seconds to dissolve. Do not bring the gelatin solution to a boil.
  5. Add a few tablespoons of kefir-sour cream to a container to gelatin and mix.

  6. Pour the resulting gelatinous mass into a bowl and mix thoroughly. Place the bowl in the refrigerator for 15-20 minutes. The mass should thicken slightly.
  7. Meanwhile, chop the chocolate with a knife. I have dark chocolate, but you can also use milk chocolate for a sweeter option.
  8. Remove the bowl with the kefir-sour cream mass from the refrigerator and beat with a mixer for 4-5 minutes to make the mass more fluffy.
