First make the spaetzle. For the dough, beat the wheat flour, salt, eggs and water in a mixing bowl until air bubbles appear. Using a spaetzle slicer, pour the dough into boiling salted water, take the finished spaetzle out of the water and set aside.
Dice the bacon and let it fry slowly in a large pan. Squeeze the garlic into the bacon cubes and let cook a little. Add the spaetzle and mix.
Beat the egg yolks and whipped cream until creamy. Grate the parmesan and add. Salt and pepper. Take the pan off the heat, pour in the custard and stir everything well. Serve sprinkled with chives.
