Instructions

  1. Clean and wash the leek and cut into fine rings. Blanch 2-3 minutes in boiling salted water, then rinse with cold water. Cook the noodles in salted water until they are al dente. Finely chop the walnuts.
  2. Thinly cut the rind from the cheese, cut the cheese into small pieces and melt in the cream over a mild heat. Stir well. Season the sauce with pepper, lemon juice and wine and stir in half of the nuts and the leek.
  3. Drain the spaghetti, place in deep plates, pour cheese and walnut sauce on top and serve sprinkled with the remaining nuts.
