Cook the spaghetti according to the instructions on the packet.
In the meantime, peel and finely dice the onion, peel and finely chop the garlic, wash, dry and quarter the cherry tomatoes. Heat the olive oil in a pan, fry the onion cubes until golden, add the creamed spinach. When it is thawed, add the garlic and cherry tomatoes. Fry briefly, stir in the mascarpone and season with salt and pepper. Drain the cooked noodles and fold them into the sauce. Arrange on preheated plates and serve immediately.
I also like to add half a dried and pitted chilli pepper, finely chopped. A little freshly grated parmesan certainly doesn`t hurt either.
