- Peel the carrots, cut into slices and cook in lightly salted water over a mild heat for about 15 minutes.
- Peel garlic and chop finely. Make a marinade from vinegar, olive oil, salt, pepper, cumin, paprika, oregano and garlic.
- Drain the carrots and drain well, mix with the marinade and leave to steep overnight.
