Instructions

  1. Mix all ingredients with a hand mixer or a food processor (dough hook). Then knead on a floured worktop until you get a ball of dough with a shiny surface.
  2. Either put in the cold for a moment and then roll out or press 2/3 of the dough with your fingers into a greased and floured springform pan (26 cm diameter). Shape the remaining third of the dough into a sausage and use it to line the edge of the springform pan, approx. 3-4 cm high.
  3. Preheat oven to 180 degrees, O / U heat.
  4. Cover the dough with baking paper and fill up with dried peas. Bake for 8-10 minutes. Remove the peas and paper and bake for 5-10 minutes. The dough should only brown very slightly.
  5. So you can use the bottom for cold fillings.
  6. Or bake the desired filling at the same time (see e.g. Mietzes zucchini cake).
