Mix all ingredients with a hand mixer or a food processor (dough hook). Then knead on a floured worktop until you get a ball of dough with a shiny surface.
Either put in the cold for a moment and then roll out or press 2/3 of the dough with your fingers into a greased and floured springform pan (26 cm diameter). Shape the remaining third of the dough into a sausage and use it to line the edge of the springform pan, approx. 3-4 cm high.
Preheat oven to 180 degrees, O / U heat.
Cover the dough with baking paper and fill up with dried peas. Bake for 8-10 minutes. Remove the peas and paper and bake for 5-10 minutes. The dough should only brown very slightly.
So you can use the bottom for cold fillings.
