Instructions

  1. First peel the sweet potatoes and cut them into cubes. Then cut the soup greens into small cubes. Also cut the onion and garlic into small pieces.
  2. Now melt the butter in the saucepan, and then fry the onion with the garlic until translucent. Then sweat the soup greens briefly and add the sweet potatoes. Deglaze everything with a dash of white wine. Then add the vegetable stock and the cream, as well as the spices salt, pepper, turmeric, curry, sugar, cayenne pepper and nutmeg. Let everything simmer.
  3. Now half a lemon is grated, 2 teaspoons squeezed out of the juice and both are added to the soup. Then you need the zest of half an orange, as well as the juice of a whole orange. Now peel the ginger, cut into small slices and add to the saucepan. Let the soup simmer for about 20 minutes. When the vegetables are soft, everything is pureed with the hand blender so that they make a creamy soup. Finally, season to taste again and, if necessary, season again.
  4. Halve the grapes for the topping. First roast the walnuts in a non-greased pan, then set aside in a bowl. Be careful when roasting, the walnuts must not burn! Then put some olive oil in the pan, add the grapes and toss everything through a little. Pour honey and balsamic vinegar over the grapes and let everything simmer briefly. Tip: You can also use jam instead of honey.
  5. The arrangement is as follows: Pour the soup into the plates and sprinkle the walnuts on top, drizzle the grapes plus the brew of the grapes into the middle of the soup.
