Let the vanilla ice cream thaw gently for 15 minutes. Roughly chop the speculoos. Finely dice the dark chocolate. Whip the whipped cream until stiff.
Line a loaf pan with baking paper.
Stir the ice well. Quickly fold in the cream, cookies, chocolate, Cointreau and orange zest. Spread into the loaf pan. Freeze again immediately overnight.
Lift out of the mold. Serve sliced with a raspberry mirror.
For the raspberry mirror, clean the raspberries and put them in a saucepan with the powdered sugar, lemon juice and lime juice and cook for 5 to 7 minutes. Then brush through a fine sieve. Cover and chill overnight.
