- Beat the cream with a packet of vanilla sugar until stiff.
- Mix the mascarpone, quark, sugar and a packet of vanilla sugar together. Fold in 2/3 of the cream. Crumble the speculoos. Drain the mandarins.
- Now layer everything in a dessert glass: the speculoos, some of the mascarpone cream, the tangerines, mascarpone cream again, then cream.
- Let the dessert cool in the refrigerator for an hour.
