Mix the dry ingredients in a large bowl. Then add the quark, egg, milk, rapeseed oil and the lemon zest and knead everything into a homogeneous dough. If the dough is too sticky, dust your hands with flour and knead the dough again on a floured surface.
Shape the dough into a long, wide roll and cut into several strands with a sharp knife. Here you can decide how you want to braid the braid. I mostly do a normal 3 strand braid, this time I had tried 5 strands that are braided together.
Place the plait on a baking sheet lined with baking paper and brush the plait with milk or, if you have it, milk whisked with egg yolk. Finally, sugar can be sprinkled over the curd cheese or sliced almonds.
Bake the spelled loaf in the oven on the middle rack for a good 25 minutes until it is golden brown.
