Instructions

  1. First prepare a yeast dough. To do this, the dough ingredients are mixed in a mixing bowl and kneaded by hand, with a hand mixer or a food processor for 5 - 10 minutes. A pre-dough is not necessary! Shape the dough into a ball, cover and let stand in a warm environment for about an hour until it has expanded to double its size. You can also let it rise overnight in the refrigerator, which is very convenient!
  2. Roll out the dough about 0.5 cm thick. Mix the crème fraîche with the milk or cream to a smooth mass and spread evenly on the dough sheet. You leave about 5 cm free at the edges. Spread a little salt and pepper to taste. Spread the fried onions on the dough, as well as the grated Gouda cheese. Roll up the sheet of dough and cut off approx. 1.5 cm thick slices with the dough scraper, place on a baking sheet lined with baking paper. You need two trays for this amount.
  3. Meanwhile preheat the stove to 50 ° C. When all the snails are in place (there will be about 22 pieces), they are sprayed with water. Each snail is decorated with sesame seeds and then it goes into the oven, where the snails have 1 hour to rise nice and large and fluffy. The oven will turn off during this process.
  4. After 1 hour, spray again with water, then turn the stove up to 180 ° C circulating air or 200 ° C top / bottom heat. In the convection oven you can bake both trays at the same time! The delicious spelled snails are ready after about 20 minutes.
  5. Remarks:
  6. They taste best one hour after baking. If any are left over on the following day, which is very unlikely, they can be baked in the oven at 200 ° C. Spray again with water beforehand!
