Instructions

  1. Mix yeast with water and sugar. Mix both flours and salt in a large bowl, form a well and add the yeast mixture, egg and crème fraiche.
  2. Then knead all ingredients into a firm dough. If necessary, add a little more water or flour.
  3. Let the dough rise in a warm place (e.g. heat the oven to 50 degrees and switch it off) for 1 1/2 hours.
  4. Then knead the dough again briefly, shape a loaf, place in a greased loaf pan and let rise for another 30 minutes.
  5. Before baking, brush the surface with water and then bake for 25-30 minutes at 200 degrees.
  6. Let the bread cool on a wire rack.
