Cut the two onions into thin half rings and sauté in the butter until translucent. Remove half of the onions and set aside. Put the spelled in half of the onion rings, allow the butter to absorb briefly and fill up with the chicken or vegetable stock. Cover and simmer on a low flame for thirty minutes. The spelled should still be firm to the bite.
Season to taste with salt, pepper and chilli and mix in the chopped parsley.
Clean the mushrooms and cut them into slices. Add to the remaining onion rings and fry for ten minutes. Season to taste with salt and pepper.
To serve, distribute the mushrooms on top of the spelled.
