Melt the sugar in a saucepan. Deglaze with the red wine. Add the spices and let boil down for approx. 10 minutes. Add the pitted cherries and let simmer for a short time (approx. 1 minute). Remove from heat and let steep for about 30 minutes.
Bring the cherries to the boil again briefly and pour them into glasses while still hot, close tightly and place on the lid to cool. So they can be kept for about a year.
I like to use it with game dishes or refine sauces with it.
