Grind Tellicherry pepper, cumin and mustard seeds and mix with thyme, marjoram, paprika powder and cayenne pepper.
Mix the tomato paste, balsamic vinegar, white wine vinegar, honey, prepared spices and a little salt in a bowl. Add oil and mix well.
The marinade is sufficient for approx. 1 kg of meat, such as B. Spare ribs. Brush the meat with the marinade and marinate for at least 1 hour before further preparation.
