Beat the cream cheese with the crème fraîche in a bowl with a whisk until smooth. Add sambal oelek. Warning, this can get very hot quickly! It is better to start with a teaspoon and try in between. Wash and clean the spring onions and cut into fine rings. Mix into the cream with a fork. Season to taste with pepper and salt.
When the cream is pulled through, the sharpness comes out even better.
