Halve the chicory, remove the bitter stalk in the middle and cut the chicory into strips. Place the strips in warm water for 10 minutes, then drain and rinse with clear water. This brings the bitter substances to a pleasant level.
Prepare the marinade from the other ingredients and pour over the chicory.
Let it steep in the refrigerator for at least 1 hour, take out 15 minutes before serving so that it is not so cold.
