Grate the carrots thinly on the julienne grater. Mix in a bowl with the pressed garlic, freshly ground coriander seeds, chopped chilli pepper, honey, vinegar and salt. Let it steep for 10 - 20 minutes at room temperature, mixing again and again in between. Then add the oil and mix well again, done.
The salad goes well with grilled meat and is easy to prepare the day before.
Note: Hot dogs are often prepared with spicy carrot salad in Ukraine.
