Wash and clean the spring onions, chili peppers and rocket. Cut the spring onions and chilli into thin rings. Roughly chop the rocket. Crumble the feta.
Whisk the eggs with the crème fraîche, chilli flakes, salt and pepper. Heat 1/2 tablespoon oil in a non-stick pan and pour 1/4 of the egg mixture into it. Let it set for 2-3 minutes while stirring. Sprinkle with 1/4 spring onion, chilli, rocket and feta each and fold up. Bake three more omelets in the same way.
