Preheat the oven to 200 degrees (top / bottom heat). Line two baking sheets with parchment paper.
Grind the fennel seeds and the chilli very finely. Grate the parmesan. Put a level teaspoon of Parmesan on the baking tray. Press into cookies with a spoon - should be very thin. Pour some of the chilli and fennel mixture over it.
Put in the oven at 200 degrees for 5 minutes. In the meantime, prepare the second tray. When the tray comes out of the oven, wait a moment and then use a pallet to remove the chips.
Let it cool down and then put it in a tin can. They can be kept for about 10 days.
