Instructions

  1. Remove 6 tablespoons of the red wine and set aside. Add 100 ml Marsala to the rest of the red wine. Put the bay leaves and cloves in a small linen bag, tie and add the bag to the Marsala red wine. Bring the wine to the boil and simmer for 5 minutes. Remove the spice sachet.
  2. Mix the pudding powder with the sugar and mix with the saved red wine. Remove the Marsala red wine from the hob, add the mixed pudding powder and bring to the boil briefly. Let the Marsala red wine pudding cool (preferably overnight in the refrigerator). Beat the pudding with the mixer. Beat the whipped cream very stiff with 2 packs of cream stiffener. Fold in half of it slowly (level 1) and then quickly (turbo level).
  3. Pour the mousse into small glass bowls and refrigerate until ready to serve. Just before serving, add a dollop of the rest of the whipped cream to each serving of mousse.
