Instructions

  1. Chop the peppers, tomatoes and cucumber into bite-sized pieces. Dice the feta cheese. Rinse and drain kidney beans and corn. Put the ingredients in a bowl.
  2. For the dressing, chop the onion and place in an extra bowl with sugar, salt and pepper. Mix with the boiling water. Add vinegar and oil and season to taste. Pour the dressing over the salad.
  3. Tip: You can also put a bunch of spring onions under the salad and leave out the onion in the dressing.
