Peel the onion. Halve the peppers, clean, core and wash. Dice peppers and onions. Wash and clean the cucumber, quarter lengthways and cut into 1/2 cm wide pieces with the skin.
Halve the olives, mix with the drained corn, onions, paprika, cucumber and strips of cheese and sausage in a large bowl.
Mix the mustard with salt, vinegar, broth and oil to a smooth sauce, use it to dress the salad. Wash the parsley, shake dry, pluck the leaves off and chop.
