Instructions

  1. Beat the eggs in a bowl, add the tarragon and white pepper. Whisk eggs. Salt to taste. Round off with 4 tablespoons of milk. Stir the mixture.
  2. Cut 2 green spring onion stalks into rings and blanch them for about 30 seconds with boiling water, then add the egg mixture.
  3. Cut the onion into slices, then quarter the slices. Chop the garlic clove.
  4. Put the olive oil together with the onions in a cold frying pan and set on the highest level. Stir quickly and constantly until the onions are translucent. Add the garlic, set to the lowest level and stir a little until the onion edges turn brown. Pour in the egg mixture and stir slowly. Before the eggs harden, add the soy sauce and slowly stir-fry until the desired consistency is reached.
  5. Tip: Instead of an onion, you can also use sliced green onions, which you add to the eggs.
  6. A slice of farmer`s bread with a thin cream cheese spread, sprinkled with grated hard cheese and thin slices of radishes, tastes best with it.
