Clean the broccoli and cut into small florets, also process the stalk, peel and cut into small pieces. Peel the carrots and cut into cubes. Wash the spring onions and cut into rings.
Heat the olive oil in a large saucepan and fry the bacon until crispy. Add the minced meat and fry until crumbly. Then add the carrots, spring onions and garlic and fry briefly. Then add paprika powder and tomato paste and sauté briefly. Now pour in the tomatoes and their juice as well as 1 liter of water. Mash whole tomatoes. Bring everything to the boil, stir in the broth, season with salt, pepper, oregano and a pinch of sugar and simmer for about 10 minutes. Add broccoli and simmer for another 5 - 7 minutes.
Annotation:
I`ve already made the recipe with only 400g mince. You can vary the amount here, depending on how you like the vegetable-meat ratio. Everything fits as a side dish: bread, pasta, rice or potatoes - depending on your taste.
