- Peel the sweet potatoes and cut into cubes. Peel or clean the garlic and spring onions and cut into small pieces.
- Put the sweet potatoes, spring onions, garlic, peanut butter and cayenne pepper in the food processor and puree.
- Bring the vegetable stock to the boil, add the puree and cook for 3 minutes. Turn the stove down and let the soup simmer for another 30 minutes.
- Garnish with parsley and roasted peanuts as an option.
