Heat the oil in a pan and fry the spring onions in it. Add the spinach leaves, turn over a medium heat every now and then until it has collapsed.
In the meantime, whisk the egg with a dash of milk, chop the basil leaves and add them. Season to taste with salt, pepper and chilli powder.
Set the hob on low heat and pour the egg mixture over the spinach. Let it set for about 4 minutes, shaking the pan every now and then so that nothing burns. Finally, turn the omelette and fry again briefly on the other side. Finished!
