Instructions

  1. Whisk the eggs and stir into the creamed spinach. Add the grated cheese and season with salt and pepper.
  2. Preheat the oven to 180 ° C fan oven. Line a baking sheet with parchment paper and distribute the spinach mixture on top. Bake for about 20 minutes, then lift the plate down and turn it over. Carefully peel off the baking paper and let the spinach and egg plate cool down.
  3. Slice the beetroot thinly. Brush the spinach platter with cream cheese and spread the beetroot slices on top. Carefully roll up the plate, wrap it in cling film and place in a cool place. Cut into slices before serving.
  4. This goes well with baguette and possibly a salad.
  5. It tastes best to me when it has passed through overnight.
