Instructions

  1. Process the egg, flour and milk into a pancake batter as usual, then stir in the spinach.
  2. There can`t be too much spinach, otherwise the pancake will be too loose and fall apart. I usually only take a 1/2 package for a 450g package.
  3. With a tomato salad yogurt sauce:
  4. Cut the tomatoes into slices or pieces, mix the yoghurt with the lemon, salt, sugar and herbs and pour over the tomatoes. Stir once at the end.
  5. I always make plenty of sauce, when the sauce runs over the pancake it is super delicious.
