Instructions

  1. Wash and clean the spinach (or let the frozen spinach thaw and squeeze out the water, cut once). Rub lemon peel, squeeze.
  2. Let the onions and garlic in the olive oil become translucent. Add the spinach until it collapses. Add rice, lemon zest, salt and pepper. Stir. Add 2 glasses of water, stir well, bring to the boil, turn the heat almost to 0. When the rice is done, drizzle the lemon juice over it just before serving.
  3. Goes very well with grilled fish or poultry.
