Mix the chopped spinach with the eggs and season with salt and pepper. Spread on a baking sheet with parchment paper and shape into a square shape. The layer thickness should be approx. 0.5 cm.
Bake for 20 minutes, until the egg has set and everything is firm.
Meanwhile, prepare the filling.
Fry the onions in butter until translucent. Fry the minced meat in another pan and season with salt and pepper. Add tomato paste, sweat briefly and then add the chopped tomatoes. Season with basil, salt and pepper.
Take the tray out of the oven, apply the minced tomato sauce and spread the onions on top. Roll up the sheet metal support lengthways according to parts. Caution! Hot!
Meatless variant:
Mix the tomato paste with water and season with salt and pepper. Fry the onions in butter until translucent. Spread the tomato sauce on the spinach roll and spread the onions on top. I chopped some fresh basil and added it. Divide the overlay in the middle again and roll it up.
