Sort the spinach, wash and drain well. Finely chop the garlic. Wash the lime off with hot water, rub some of the peel and squeeze out the juice. Halve the avocado, remove the stone, peel the two halves and cut into wedges or cubes and drizzle with 1 tablespoon of lime juice. Roughly chop the walnuts and roast them in a pan without fat. Cut the bacon into slightly wider strips. Fry until crispy without fat.
Mix the garlic, lime juice, olive oil and nut oil into the dressing and season with the lime zest, salt, pepper, mustard and sugar.
Mix the spinach and avocado with the dressing, serve sprinkled with nuts and bacon and serve with white bread.
The nut oil supports the taste of the walnuts in the salad. You can also prepare the dressing with just olive oil or sunflower oil.
