Clean, wash and spin dry the spinach. Cut the mango from the core, peel and dice the pulp. Cut the salmon fillet bite-sized. Peel the onion and cut into narrow strips. Arrange everything on two plates.
For the dressing mix sweet chili sauce, ginger, soy and fish sauce and rice vinegar, mix in the oil and season to taste. Serve the salad drizzled with the dressing.
