Instructions

  1. Wash the spinach thoroughly, drain and arrange on plates.
  2. Just cut off the green at the top of the radishes and then cut off a jerk (an edge) lengthways so that the radish has a standing surface. Cut two thin slices of the Scherzel for the ears. Use a sharp knife to make two slits for the ears in the radish and insert the two slices. Poke two holes for the eyes, press in the juniper berries and place the radishes on top of the spinach.
  3. For the dressing, coarsely chop part of the peanuts and finely chop the rest. Mix the chopped peanuts with the pomegranate molasses and the water and season with pepper and, if necessary, salt.
  4. Spread the dressing on the spinach and garnish with wild garlic blossom or chopped garlic.
